When do you start the process of will writing and who do you go to for will writing assistance and services?

The first and obvious choice for will writing is a solicitor. For most of us our first encounter with a solicitor is when we buy a house and we tend to stay with that solicitor throughout our lives. These days though much of the work associated with buying a property is almost wholly done remotely and you never actually walk into a solicitors office.
